Maple-Nut Shortbread Bars (using our Blueberry or Apple Pie Bar Mix)

These rich bars are a delicious way to savor maple season. Similar to pecan pie but loaded with maple flavor and baked into bars using our Pie Bar Baking Mix. YUM🍁
Maple-Nut Shortbread Bars
Yields 9x13 or 8x11" baking pan (approx. 20 bars)
Crust:
One package Carolyn's Farm Kitchen Blueberry or Apple Pie Bar Baking Mix
Filling ingredients:
1 ½ c. lightly packed brown sugar
2/3 c. local maple syrup
2 large eggs
4 Tbl. (1/2 stick) unsalted butter, melted
1 tsp. maple extract
½ tsp. salt
2 c. coarsely chopped unsalted nuts (such as pecans, walnuts, cashews, almonds, etc.)
Preheat the oven to 350 and grease baking pan. Prepare Pie Bar Mix according to package directions and spread the mixture evenly into pan, packing gently on bottom and going ½” up the sides. Bake crust for 15 minutes then remove from the oven and cool.
In a large bowl combine all the filling ingredients except the nuts, whisking until smooth and blended. Pour this mixture into the cool crust and scatter the nuts evenly over the top. Bake for 30-35 minutes or until the filling is 'set' but not firm when pan is jiggled. Remove from the oven and COOL COMPLETELY before cutting into desired size bars.
