AUTUMN APPLE HARVEST, Thursday, October 18th, 6-9 pm, Appleton Farms, Ipswich

It’s apple season in New England and we’re honoring this favorite crop in our farm kitchen!  We’ll prepare a complete menu including both sweet & savory dishes using apples sourced from local orchards, with recipes such as Apple, Onion, & Cheddar Tart, Brick Chicken with Roasted Apples & Cider Pan Gravy, Sweet & Sour Braised Red Cabbage, and Caramel Apple Bread Pudding.  Our workshop includes hands-on cooking, professional culinary tips & techniques, printed recipes, plus a sampling of unique heirloom apples and locally crafted hard cider! Class ends with a wonderful meal in the farmhouse dining room.  (byob beer & wine allowed) 

 

FALL FAVORITES, Monday, October 22nd & October 24th 6-9 pm, Whittier Tech, Haverhill  

It’s Autumn in New England and we’re celebrating in the kitchen!  We’ll prepare a wonderful seasonal menu highlighting locally sourced crops from nearby farms and orchards, with recipes such as Pumpkin Pie Dinner Biscuits, Braised Chicken with Garlic, Wine, & Root Vegetables, Maple & Spice Roasted Farm Squashes, Apple Harvest Fruit Strudel. Our class includes hands-on cooking, professional culinary tips & techniques, printed recipes, and a delicious harvest dinner at the end of the evening!

SWEET AS PIE

It’s pie time and we have you covered for the Thanksgiving holiday!  Join us in the kitchen as we learn all the basics for making delicious country-style pies including techniques for tender pie crust, rolling & assembly, and proper baking…..all while keeping it fun, simple, and stress-free.  Class includes individual hands-on preparation of 9” deep dish Apple-Cranberry Pies using local farm apples, and each participant will take home their very own unbaked pie to pop in the freezer and bake fresh for the holiday table.  We’ll also share the recipe (and sample) another seasonal pie favorite too.  Class includes hands-on instruction, printed recipes, and a relaxing dessert of pie and coffee at the end of our workshop.

GIVING THANKS: HOLIDAY HARVEST TABLE, Thursday, November 15th, 6-9 pm, Appleton Farms, Ipswich                                                                                                                                                                                                 This special culinary workshop celebrates the bounty of the farm harvest with inspirational dishes perfect for your Thanksgiving table and beyond!  We’ll celebrate seasonal crops as we prepare delicious rustic dishes…..many of which can be made ahead to keep it stress-fresh for the big day.  Our menu may include recipes such as Pumpkin Pie Dinner Biscuits, Savory Mushroom & Pecan Stuffing, Herb-Roasted Turkey with Pan Gravy, Winter Greens Gratin, and Maple-Walnut Pumpkin Roll!  Class includes hands-on cooking with chef instruction, printed recipes, and a wonderful harvest meal at the end of the evening.  Byob beer & wine allowed. 

 

GINGERBREAD FOR GROWN-UPS, Sunday, December 9th, 3-6 pm, Appleton Farms, Ipswich                                                                                                                                                                                                                                Tap into your childhood and celebrate the season with this very special adult Gingerbread House workshop!!  We’ll cover all things gingerbread from making and baking the gingerbread pieces, to learning how to easily assemble houses that won’t crumble!  From there, it’s all about creative fun decorating your very own gingerbread house to display & eat throughout the holidays!  Class includes hands-on assembly and decorating, instruction, printed recipes, and take-home gingerbread house. Byob beer & wine allowed.

WINTER COMFORT FOODS, January 7th, 6-9 pm, Whittier Tech, Haverhill & January 18th, 6-9 pm, Appleton Farms, Ipswich

New England winters call for hearty, wholesome, comforting foods! Learn classic culinary tips and kitchen techniques while preparing delicious one-pot recipes sure to please family and friends alike.  Our menu may include recipes such as Roasted Cauliflower Mac & Cheese, Farmhouse Coq au Vin, and old-fashioned Rice Pudding for dessert.  Hands-on cooking, culinary instruction, printed recipes, and a hearty winter meal at the end of the evening.

WINTER KETTLE SERIES, Appleton Farms, Ipwsich

Join us as we warm up in the kitchen preparing steaming pots of hearty soup, chowder, & stew all while learning classic culinary techniques and helpful kitchen tips along the way. Each workshop date will focus on a specific ‘kettle’ and recipes include a homemade bread as well! BYOB beer & wine allowed.

Soups – January 10th, 6-8:30 pm (Roasted Lemon Chicken & Orzo Soup, Twice-Cooked Winter Vegetable Soup, Parmesan Pull-Apart Rolls)

Stews – January 31st, 6-8:30 pm (Farmhouse Coq au Vin, Rosemary, Butternut, & White Bean Stew, Savory Herb Popovers)

Chowders – February 7th, 6-8:30 pm (Spicy Clam & Chorizo, Vermont Cheddar & Vegetable, Seeded Garlic Wheat Crackers)

SOUP, CHOWDER, & STEW, February 4th, 6-9 pm, Whittier Tech, Haverhill

Our menu may include recipes such as Rosemary, White Bean, & Butternut Stew with Winter Pesto, Spicy Clam & Chorizo Chowder, and a delicious ‘Baked’ Winter Vegetable Soup. We’ll be sure to have a bread basket on the table too!   Class includes hands-on cooking, culinary instruction printed recipe book, and a wonderful warming winter meal at the end of the evening.

VALENTINE’S COOKING & DINING, February 14th, 6-9 pm, Appleton Farms, Ipswich

Join us for this annual favorite as we spend a fun evening of cooking, learning, and delicious dining with new friends in the farmhouse.  Our menu will include a selection of Appleton’s Farmstead Cheeses, along with recipes such as Garlic & Parmesan Stuffed Ipswich Clams, Kale Caesar Salad, Beef & Root Vegetable Bolognese with Artisan Pasta, and Dark Chocolate Gingersnap Tart.  Hands-on cooking with instruction, printed recipe booklets, and a wonderful ‘Valentine’ dinner at the end of the evening.  BYOB beer & wine allowed.

MAPLE SUGARING TOUR & COOKING WORKSHOP, February 23rd, 10-12:30, Appleton Farms, Ipswich

Join us on the farm for this seasonal favorite, learning all about maple sugaring in New England as we tour the farmstead and sugar shack to learn about the syrup-making process before heading back to the kitchen to prepare delicious maple dishes using farm-made syrup!  We’ll prepare recipes such as Homemade Maple & Apple Sausage, Sweet & Sour Brussel Sprout Slaw, and Upside-Dow Maple-Pear Pancake, and savored by all at the end of the workshop.

HEARTY, HOMESTYLE VEGETARIAN, March 28th, 6-9 pm, Appleton Farms, Ipswich

Whether you’re a vegetarian or just looking to lighten up a bit and eat less meat, this workshop is for you!  We’ll use everyday ingredients to prepare wholesome, hearty, meat-free dishes sure to satisfy everyone at your dinner table…..vegetarians and ‘non’ alike.  Learn about alternative protein sources and simple substitutions, along with culinary tips and kitchen techniques as we prepare recipes such as savory Spinach, Mushroom, & Goat Cheese Strudel,  the ‘Veggie’ Wedge Salad with Roasted Beets, Farm Eggs, & Homemade Russian Dressing, Artichoke & Fava Bean Paella, and delicious Spelt Banana Bread with Chocolate Chips.  BYOB beer & wine allowed.  

 

EGGS ALL WAYS! – SPRING BRUNCH, March 4th, 6-9 pm, Whittier Tech, Haverhill & March 10th, 9:30-12:30, Appleton Farms, Ipswich

Spring is soon arriving and it’s a perfect time to change it up in the kitchen with Spring brunch in mind.  Join us as we cook with farm-fresh eggs, learning classic culinary methods and techniques while preparing creative recipes perfect for everyday breakfast, holiday brunches, dinner, and dessert! Our menu will include recipes such as perfect soft & hard-boiled eggs with Green Goddess Herb Mayo, Poached Eggs in Tomato Sauce with Chick Peas & Feta, Canadian Bacon & Asparagus Frittata, and Crepes with Lemon Curd, Ricotta, & Berries.  Class includes hands-on cooking, culinary instruction, printed recipe book, and an ‘eggcellent’ brunch at the end of class.
