From the Farm Kitchen: Spring Brunch, Sun, April 8th , 9:30AM-12:30PM, Appleton Farms

Everyone loves brunch!  Join Appleton Cooks! for this hands-on culinary class to sharpen up your kitchen skills and fill your recipe book with seasonal and delicious recipes from professional chef-instructor Carolyn Grieco.   Inspired by the shift in seasons and the New England foods available in March, this class will deepen your appreciation for storage & hoop house crops, locally raised meat, farmstead maple and artisan cheeses.  After we finish our hands-on class, we will enjoy our creations in the farm house dining room.  BYOB mimosas if you’d like to.  Our menu may include recipes such as: Traditional Red Flannel Corned Beef & Beet Hash with Shirred Farm Eggs, Lemon-Buttermilk Waffles with Blueberry Butter, Spring Vegetable Gratin with Farmstead Cheese, Carrot-Spice Muffins with Yogurt Icing

The Excellent Egg: All About Egg Cookery Saturday, April 14th, 9:00-Noon, Appleton Farms

The hens are busy laying and farm-fresh eggs are the star of this culinary workshop! Join us in the kitchen as we learn all about the humble egg, from purchasing, sizing, and breed varieties, and most important how to cook them successfully in your kitchen. We’ll learn key cooking methods, helpful tips and techniques as we prepare recipes such as Canadian Bacon & Asparagus Frittata, Shashuka (eggs poached in a spicy tomato sauce with feta & chick peas), and Dessert Crepes with Lemon Curd, Ricotta, and Berries!  Class includes hands-on cooking with professional chef instruction, printed recipes, and a wonderful lunch in the farmhouse to follow.

Ancient Grains Friday, April 20th, 6-8:30 pm, Appleton Farms

Join us for this very special workshop as we explore the wonderful world of ancient grains and how to incorporate them in your daily cooking.  Locally grown and milled grains are popping up everywhere and their culinary popularity continues to grow. We’ll explore many different varieties of grains along with their flavor & texture profiles, nutritional benefits, and how to handle them in the kitchen.  We’ll prepare unique recipes such as Freekeh Tabbouleh, Chicken & Roasted Vegetable Curry with Kamut, and Banana-Nut Spelt Muffins just to name a few.  Class includes hands-on cooking with professional chef instruction, printed recipes, and a wonderful meal at the end of class.  BYBO beer & wine allowed.

Culinary Skills: Technique to Troubleshooting  Monday, April 23rd, 6-9 pm, Whittier Tech

We’ll hone our culinary skills in this hands-on class, covering everything from knife skills & cooking methods, to sauce making and seasoning as we prepare delicious pasta dishes to savor at the end of the evening. Our recipes will include Lemon-Basil Chicken Piccata, Roasted Eggplant Arriabbata, and Spring Vegetable Carbonara! Plus, participants will get to contribute to our menu….. sharing in advance some common kitchen mistakes they experience at home for us to address in class! Workshop includes chef instruction, printed recipes, and a full dinner at the end of the evening.

Mother’s Day Brunch: Culinary Workshop Saturday, May 12th   Two Sessions: 9-11:30 am & 2-4:30 pm, Appleton Farms

Food is love and what better way to celebrate Mom than spending time together in the farm kitchen? Together we’ll prepare a very special Mother’s Day Brunch menu highlighting our farm foods and vibrant spring flavors, all while learning culinary tips & techniques in good company.  Our menu may include dishes such as traditional Red Flannel Beef & Beet Hash with Shirred Eggs, Spring Asparagus & Leek Puff Pie, Maple & Black Pepper Candied Bacon, and Lemon-Ricotta Pancakes with Berries.  Hands-on cooking with professional chef instruction, printed recipes, and a wonderful Mother’s Day celebration brunch in the farmhouse dining room.  BYOB champagne for mimosas — we’ll provide the fresh juices!

Summer Grilling, Monday, May 21, 6-9 PM, Whittier Tech

Gear up for the season and learn to cook with fire!  This class highlights the art of grilling, covering grilling technique along with helpful do’s and don’ts to ensure your outdoor cooking success all summer long.  Get comfortable with hands-on skills as we prepare a complete menu (dessert too!) on the grill, followed by a delicious early-summer dinner at the end of the evening.  This is a great way to kick off the summer season!

Summer Time Recipes: Picnics, BBQ and More!  Appleton Farms, Sunday, May 20th, 2-5:00 pm

Summer is almost here and we’re ready to switch gears in the kitchen with fun, fast, & fresh recipes to take you on the go throughout the season!  Our menu is full of easy, make-ahead dishes that are conveniently portable and great for feeding a crowd.  These summer recipes are perfect for your family picnics, backyard BBQ’s, or casual entertaining with friends.  Class includes hands-on cooking, chef instruction of cooking techniques, helpful picnic tips, printed recipes, and our very own summer picnic here on the farm!  BYOB beer & wine allowed.  Recipes may include dishes such as Garden Veggie Stuffed Picnic Loaf, Penne Salad Nicoise, Grilled Curried Chicken Kebabs with Cucumber-Yogurt Sauce, Fresh Salmon & Spinach Burgers, and Honey-Ginger Lemonade.

‘Cooking with Fire & Local Beer’  Saturday, June 9th, 4-7 pm, Appleton Farms

Join us for this special event as we fire up the earth oven and head outdoors to the kitchen patio for an afternoon of cooking with fire and sampling local beer!  Experience hands-on fun cooking in our traditional wood-fired earth oven along with open-flame cooking on the grill, all while learning helpful tips & grilling techniques for successful outdoor cooking all summer long.  Our ‘fire’ menu will be filled with farm foods and flavors of the season and may include recipes such as Earth Oven Flatbreads for starters along with a fire-roasted entrée, sides, and dessert.  Plus, we’ll have local beermakers on site with an opportunity to learn more about their craft and sample delicious brews.  Workshop includes hands-on cooking with instruction, printed recipes, local beer tasting, and farm dinner on the patio.  BYOB wine and additional beer allowed.

‘Sweet & Savory Strawberries’  Wednesday, June 27th, 6-9 pm, Appleton Farms

It’s Strawberry season here on the farm and we’re celebrating the arrival of this favorite crop by cooking up all things strawberry in the kitchen!  Our workshop begins with a brief walk out to the fields (weather permitting), learning more about berries while sampling and harvesting some for our class.  We’ll then head to the kitchen to prepare a delicious menu of sweet & savory strawberry recipes while covering traditional cooking skills and techniques along the way.  Class includes hands-on cooking, professional chef instruction, printed recipes, and a ‘strawberry celebration’ dinner at the end of the evening.  BYOB beer & wine allowed.  Recipes may include dishes such as a fresh Strawberry-Jalapeno Salsa, Summer Strawberry & Mint Tabbouleh, and amazing Strawberry Cream Pie.
