Join Appleton Cooks! and chef Carolyn Grieco for our winter culinary workshop series. With seasonal ingredients as our inspiration, these classes bring together the farm’s winter bounty and professional chef instruction to inspire, improve, and support your culinary endeavors at home.  This culinary workshop features our favorite soups and will also cover homemade bread making skills.  We’ll cover culinary techniques & kitchen tips as we prepare seasonal recipes perfect for the long chilly winter season!  Our menu may include dishes such as Roasted Chicken & Lemon Orzo Soup, Winter Greens ‘Bread’ Soup with Parmesan, and traditional Anadama Bread.

With seasonal ingredients as our inspiration, these classes bring together the farm’s winter bounty and professional chef instruction to inspire, improve, and support your culinary endeavors at home.  This culinary series features savory chowders paired with easy & delicious homemade crackers.  Our menu may include dishes such as Smoked Haddock Chowder, Wild Mushroom & Yukon Potato Chowder, and homemade Seeded-Garlic Wheat Crackers.

Winter Comfort Food! Monday, Jan. 29, 6-9 PM, Whitier Tech

Join us in the teaching kitchen as we prepare a warming winter menu filled with favorite comfort-style foods including recipes such as hearty soups & stews, grown-up mac & cheese, savory popovers, and winter dessert of course!  Class includes hands-on cooking, culinary instruction covering traditional cooking methods and techniques, printed recipe booklet, and a wonderful meal in the school’s Poet’s Inn Restaurant at the end of the evening.

With seasonal ingredients as our inspiration, these classes bring together the farm’s winter bounty and professional chef instruction to inspire, improve, and support your culinary endeavors at home.  This culinary series features hearty stews and homemade bread making skills.  We’ll cover culinary techniques & kitchen tips as we prepare seasonal recipes perfect for the long chilly winter season!  Our menu may include dishes such as Spicy Lentil & Sausage Stew with Winter Pesto, Lamb & Barley Scotch Broth Stew, and Savory Herb Popovers.

Farmhouse Pot Pies, Fri, Jan 26, 6-9PM, Appleton Farms

Pot pies are comfort food at its best! Join us in the farm kitchen as we take inspiration from seasonal farm crops to prepare delicious savory pot pies.  We’ll cover multiple cooking techniques as we prepare three very distinctive fillings, along with scratch pastry making and pie assembly methods! Our menu may include recipes such as: Chicken & Mushroom Stroganoff Skillet Pie, Seafood Pot Pie with Common Cracker Crust, Farmstead Beef & Winter Vegetable Pot Pie.  Hands-on cooking, chef instruction, and a wonderful warming winter meal at the end of the evening!  BYOB beer & wine allowed.

Valentine’s Farm Dinner and Culinary Workshop (two dates offered), Sat, Feb 10, or Wed, Feb 14, 6-9PM, Appleton Farms

Spend a cozy evening with your sweetheart on the farm cooking up a delicious meal. Professional chef-instructor Carolyn Grieco will lead the class through the making of an intimate multi-course dinner in the state-of-the-art farm kitchen. Culinary tips and techniques will be covered as we prepare our dinner followed by a relaxing meal in the farmhouse dining room. Printed recipe booklet and indulgent chocolate take-treats to savor later! BYOB wine, champagne and beer is allowed. Menu will be determined based on the seasonal food available, any may include dishes such as: Savory Appetizer Strudel, Winter Greens Salad with Baked Goat Cheese & Herb Vinaigrette Farmhouse Coq Au Vin, Skillet Potatoes with Thyme, and Red Velvet Cake Jars.

From the Sugar Shack: Maple Culinary Class and Sugaring Tour (two dates offered)  Sat, Feb 24 or Sat, Mar 03, 10AM-12:30PM, Appleton Farms
March is the time for sugaring in New England.  Appleton keeps this very special tradition alive by tapping the farms’ beautiful maple trees and producing wood-fired, small-batch syrup. The first part of the workshop will include a leisurely walk around the farmstead to show how sap is harvested and collected. The tour will wrap up at our sugar shack so you can see (and smell!) the transformation of sap to syrup. You’ll gather in the farm kitchen for the second part of the workshop, where chef Carolyn Grieco will teach how to make some of the most delectable maple syrup recipes.  Workshop ends with a generous sampling of all our delicious maple dishes! Recipes may include: Homemade Maple-Apple Farm Pork Sausage, Citrus & Maple Whole Roasted Carrots, Maple Lace Wafer Cookies

Celebrating Maple Season, Monday, February 26th, 6-9 PM, Whittier Tech

This class truly celebrates maple sugaring season in New England and we’ll capture the essence in the kitchen as we prepare a full maple-inspired menu including both savory and sweet dishes and using locally harvested farm maple!  We’ll also learn the basics about harvesting, production, and grading processes, and do our own maple ‘taste testing’.  Class ends with a wonderful seasonal dinner in the Poet’s Inn dining room.

Simple Cooking: 5 Ingredients or Less!, Thursday, March 1st, 6-9 pm, Appleton Farms

This workshop is all about keeping it simple in the kitchen!  No lengthy recipes or special shopping list needed……we’ll prepare delicious, creative dishes using only a handful of seasonal ingredients and culinary techniques for simple success in your home kitchen.  These recipes are sure to please all, whether weeknight suppers for the family or company dinners, and our menu may include dishes such as Escarole & Dropped Egg Soup with Parmesan, Maple & Mustard Crusted Chicken, Shell Pasta with Spicy Red Clam Sauce, and Sheet Pan Veggie Roasts. Class includes hands-on cooking, chef instruction, printed recipes, and a wonderful meal at the end of the evening.  BYOB beer & wine is allowed.

Culinary Skills Series (class dates will feature different menu and culinary skills), Sat, Mar 10 and Sat, Mar 24, 10AM-12:30PM, Appleton Farms

This ‘back-to-basics’ series provides a comprehensive approach to the fundamentals of cooking as we explore traditional culinary methods & techniques to enhance your knowledge, skill, and understanding in the kitchen.  Each workshop will focus in-depth on a specific skill set, with guided hands-on practice as we prepare seasonal dishes applying specific techniques. Proper knife skills, measuring, and kitchen tools will also be discussed, and all workshops include chef instruction, printed recipes, and a light lunch in the farmhouse!

March 10th theme: Kitchen Skills 101 Want to learn the difference between dice, chop, and julienne?  Roasting, searing, and poaching?  We’ll cover everything from proper knife handling and technique to an in-depth understanding of cooking methods…..what, when, and how to do so properly as we prepare ‘practice’ recipes to enjoy!

March 24th theme: Kitchen Troubleshooting!  Over seasoning, too thin sauces, gummy mashed potatoes, broken chocolate, flat cookies, soggy pizza crust, breading that won’t stick….. these are common everyday kitchen mishaps.  Join us as we learn about (and intentionally make) common cooking mistakes.  Get hands-on experience learning simple fixes and tricks of the trade for overcoming potential disasters in the kitchen.

From the Farm Kitchen: Spring Brunch, Sun, Mar 11 , 9:30AM-12:30PM, Appleton Farms AND Monday, March 26th, 6-9PM, Whittier Tech
Everyone loves brunch!  Join Appleton Cooks! for this hands-on culinary class to sharpen up your kitchen skills and fill your recipe book with seasonal and delicious recipes from professional chef-instructor Carolyn Grieco.   Inspired by the shift in seasons and the New England foods available in March, this class will deepen your appreciation for storage & hoop house crops, locally raised meat, farmstead maple and artisan cheeses.  After we finish our hands-on class, we will enjoy our creations in the farm house dining room.  BYOB mimosas if you’d like to.  Our menu may include recipes such as: Traditional Red Flannel Corned Beef & Beet Hash with Shirred Farm Eggs, Buttermilk Waffles with Stewed Fruit & Farm Maple, Spring Vegetable Gratin with Farmstead Cheese, Carrot-Spice Muffins with Yogurt Icing

Summer Grilling, Monday, May 21, 6-9 PM, Whittier Tech

Gear up for the season and learn to cook with fire!  This class highlights the art of grilling, covering grilling technique along with helpful do’s and don’ts to ensure your outdoor cooking success all summer long.  Get comfortable with hands-on skills as we prepare a complete menu (dessert too!) on the grill, followed by a delicious early-summer dinner at the end of the evening.  This is a great way to kick off the summer season!
